UNDATED (CNN) - Happy Chocolate Cake Day, everyone!
That's right, January 27 has been named National Chocolate Cake Day, thanks to Dr. James Baker.
Dr. Baker is responsible for bringing chocolate cake into fruition. In 1764, he developed a way to make chocolate by grinding the cocoa beans between two giant millstones. Cocoa powder was born, and with it came infinite baking possibilities.
From then on, people were on a mission to discover what they could do with chocolate. Conrad Van Houten's mechanical extraction method, which created cacao butter, and Swiss Rodolphe's conching method for smooth, silky chocolate in 1879, led to a rich chocolate that blended smoothly with cake batter. So, thank them too, the next time you take a bliss-inducing bite.
Duncan Hines also developed a "Three Star Special" cake mix, meaning you could make white, yellow or chocolate cake, after World War II, making it even easier for folks to find a fast fix. Since then, Americans have been obsessed with chocolate cake trends. Who could forget chocolate decadence in the '80s, or our favorite molten lava cakes? Now, it's flourless and artisanal chocolate cake-like confections.
